Description
Founded in 1818 in Mareuil‑sur‑Aÿ, Billecart‑Salmon remains one of the last great family-owned Champagne houses, renowned for its elegant, precise, and refined style.
The Blanc de Blancs Grand Cru is an exceptional cuvée made exclusively from Chardonnay sourced from five Grand Cru villages in the Côte des Blancs (Avize, Chouilly, Cramant, Mesnil‑sur‑Oger, and Oger). Crafted from two different vintages with a generous proportion of reserve wines, it reveals depth, consistency, and crystalline purity. Produced in limited quantities, this outstanding cuvée embodies the ultimate refinement of the Billecart‑Salmon style.

Tasting
Appearance: Ultra-fine and delicate effervescence, with elegant bubbles rising through a bright golden robe highlighted by shimmering green reflections.
Nose: Pure, mineral-driven and refined nose, releasing aromas of dried fruits (almond, fresh hazelnut), white flowers, zesty citrus, brioche and buttery nuances.
Palate: Creamy and delicate attack; fine-textured with chalky and meringue-like notes, candied citron zest, fresh almonds and a touch of minerality. The whole evolves with complexity, vinosity and elegance, leading to a fresh, persistent and refined finish.
Food Pairing: Ideal as an aperitif, but also pairs beautifully with caviar, oysters, shellfish, premium raw fish (carpaccio or ceviche), and seafood.
Serving Temperature: Best served between 8 °C and 10 °C to optimize the cuvée’s finesse and freshness.
