OEil-de-Perdrix 2024

Domaine Saint Sébaste is a family estate located in Saint-Blaise in the canton of Neuchâtel, Switzerland. The approximately 20-hectare vineyard is farmed biodynamically and has been DEMETER certified since 2015. The estate emphasizes sustainable viticulture and precise winemaking to preserve fruit authenticity.

The Œil de Perdrix is a historic specialty of Neuchâtel. Made exclusively from Pinot Noir, this delicate rosé is produced through direct pressing, giving it its characteristic pale salmon color. Elegant and mineral-driven, it reflects finesse and freshness under the AOC Neuchâtel designation.

Appearance: Bright pale salmon color, clear and luminous.

Nose: Subtle aromas of fresh strawberry, delicate raspberry and fine floral notes with a hint of citrus.

Palate: Fresh and elegant attack, supple texture, vibrant minerality and a clean, slightly saline finish.

Food Pairing: Refined aperitif, perch fillets, sushi, shellfish and light summer cuisine.

Serving Temperature: 8 – 10°C.
