Description
In wine-growing terms, the Divico is distinctive for its very strong resistance to the three principal grape diseases encountered in Switzerland (mildew, oidium and botrytis), making it possible for the wine-grower to avoid almost any phytosanitary treatment. In wine-tasting terms, its fruity flavours, freshness and smooth tannins make it a delightful variety.
Tasting
Appearance: Very intense robe with deep purple hues, nearly opaque.
Nose: Aromas of black cherry, stewed plum, and mild spices (black pepper, clove), with a hint of graphite and liquorice.
Palate: Smooth entry, refined and well-integrated tannins. Juicy mid-palate with ripe black fruits. The finish is fresh and digestible, lingering on cherry and spice notes.
Food & wine pairing: Perfect with all cuts of pork (roast, tenderloin, chop), beef pot-au-feu, grilled meats, alpine cheeses (aged Gruyère, smoked raclette), or a black cherry clafoutis.
Serving temperature: Serve between 14°C and 16°C to enhance the ripe tannins and spicy complexity.
