Pinot Noir - Nature 2023

Domaine Saint Sébaste is a family estate located in Saint-Blaise in the canton of Neuchâtel, Switzerland. The vineyard spans approximately 20 hectares cultivated biodynamically and has been DEMETER certified since 2015. The estate follows a low-intervention philosophy aimed at expressing varietal purity and vineyard identity.

The Pinot Noir Nature reflects this minimalist approach. Produced with limited oenological inputs and generally without added sulphites (in line with the estate’s “Nature” philosophy), it delivers an authentic and unadorned expression of Pinot Noir under the AOC Neuchâtel designation. The wine emphasizes freshness, vibrancy and fruit transparency.

Appearance: Bright ruby color, occasionally slightly cloudy depending on the vintage, consistent with natural winemaking.

Nose: Pure aromas of fresh cherry and raspberry, delicate floral notes and occasionally a subtle wild nuance.

Palate: Lively attack, supple texture and fine, juicy tannins. Energetic and refreshing finish.

Food Pairing: Natural cuisine, roasted poultry, grilled vegetables, refined vegetarian dishes and artisanal charcuterie.

Serving Temperature: 14 – 16°C.
