Tasting
Appearance: Deep ruby robe. The intensity of its color reveals great concentration and hints at an expressive, well-structured wine.
Nose: A complex and generous nose, with aromas of blackberry, wild strawberry, and stewed red fruits. With aeration, saline notes emerge, along with hints of tapenade, thyme, and sweet spices, adding depth and finesse.
Palate: Medium-bodied, both dense and smooth. The tannins are present yet elegant, framing a ripe and intense fruit core. A lovely freshness carries the finish, with slightly earthy and spicy nuances that enhance the overall elegance.
Food Pairing: Ideal with shallot-crusted ribeye, rosemary-roasted rabbit, grilled lamb chops, or duck confit. It also pairs beautifully with aged cheeses, especially blue-veined varieties like Fourme d’Ambert.
