Description
It all starts with Albert, the ancestor, the visionary of the end of the 19th century, who planted the roots of the Massy family in these terraced vineyards, who chose the best plots, who knew how to work them with rigour and honesty to produce the wines that launched their reputation.
By Jean-François, the gentleman precursor who continued and developed the story with the nobility born of a job well done. He did everything to improve the quality, to bottle his wine rather than sell it in bulk, as was done at the time.
Luc and Margaret, today, have further developed the story, in this obsession to respect the terroirs as much as possible.
Gregory and Benjamin, the fourth generation, are responsible for keeping this saga alive even further back in time. They have all travelled, discovered, and looked elsewhere to bring back the best practices.
The Dézaley Chemin de Fer is a wine with a personality on its own. It needs at least one year of storing in order to let express its fullness, aromatic complexity; hints of flint, almonds and honey.
Tasting
Appearance: Pale golden yellow robe with bright green reflections, luminous and expressive in the glass, highlighting the freshness and purity of a great Chasselas from Lavaux.
Nose: The bouquet opens with delicate and complex aromas of acacia blossom, quince, peach and citrus, complemented by a marked minerality reminiscent of flint or wet stone, lending the wine refined elegance.
Palate: A lively and structured attack, supported by a fine, racy acidity that carries a generous yet finely chiselled texture. Flavours evoke ripe yellow fruits, citrus zest and a subtle herbal touch, all underpinned by saline minerality and elegant tension. The finish is long, persistent and very expressive.
Food pairing: This characterful white wine pairs beautifully with noble fish or delicate sauces (such as perch or féra), shellfish, truffled poultry or aged cheeses. Its structure and freshness also allow it to elevate richer, more flavourful dishes.
Serving temperature: Serve chilled between 10 °C and 12 °C to allow the full aromatic intensity, freshness and minerality of this Grand Cru to express itself.
