Description
The winemaker Valentina Andrei settled in Valais (Switzerland) after formative experiences at Domaine de Beudon and alongside Marie-Thérèse Chappaz, shaping her commitment to high-precision viticulture, often practised biodynamically.
Cornalin Rouge du Pays “Granite” is made from the indigenous Cornalin grape, grown on young parcels rooted in limestone and granite soils in Chamoson/Fully, under the Valais AOC designation. It reflects her desire to showcase this rare variety through meticulous vinification (destemmed harvest, indigenous yeasts, extended maceration), aiming to express finesse, depth, and a strong sense of place.
Tasting
Appearance: deep ruby or garnet with violet hints.
Nose: aromas of blackberry, black cherry, spice (pepper), liquorice, with a slightly wild edge.
Palate: a silky entry, well‑present but refined tannins, strong supporting acidity, long finish on ripe fruit, spice and minerality.
Food pairings: game, grilled red meat, rich stews, mature cheeses, dishes with subtle spice or mushrooms.
Serving temperature: about 15‑17 °C.
