Founded in 1818 in Mareuil-sur-Aÿ by Nicolas François Billecart and Elisabeth Salmon, Billecart-Salmon is a family-owned Champagne House that has cultivated a style based on finesse, balance and precision for more than two centuries. The pursuit of freshness, meticulous winemaking and extended cellar ageing are essential elements of its identity.

The “Les Rendez-vous de Billecart-Salmon” collection was born from this experimental approach. Each edition highlights a particular Champagne grape variety and terroir through limited-production cuvées, generally with low dosage and extended ageing on the lees. The first six Rendez-vous alternate between Meunier, Pinot Noir and Chardonnay, offering different interpretations of the terroirs of the Marne Valley, Montagne de Reims and Côte des Blancs.

N°1 – Meunier
A first expression of Meunier from the Marne Valley, generous and refined, highlighting fruit, freshness and finesse.

N°2 – Pinot Noir
A precise and structured Pinot Noir from the Montagne de Reims, combining fruit, freshness and fine minerality.

N°3 – Meunier
A pure and generous interpretation of Meunier, characterised by expressive fruit, delicate texture and remarkable freshness.

N°4 – Chardonnay
A taut and mineral Chardonnay from the Grand Cru village of Mesnil-sur-Oger, driven by citrus, white flowers and a distinctive chalky character.

CINQ – Pinot Noir
A 100% Pinot Noir from historic terroirs of the Montagne de Reims, combining floral and fruity notes with minerality, beautiful depth and a saline finish.

N°6 – Chardonnay
A Grand Cru Chardonnay from Mesnil-sur-Oger, elegant and concentrated, characterised by fresh citrus, floral notes and persistent minerality.
