A 100% monovarietal oil produced from Nocellara Etnea olives grown on the volcanic slopes of Mount Etna in Sicily. Crafted by traditional estates like Donnafugata and Frantoi Cutrera, this oil reflects volcanic soil mineral richness and artisanal heritage with hand-harvested olives and cold extraction.
Tasting
Appearance: intense green-gold with vivid reflections.
Aroma: fresh olive, cut grass, artichoke, green tomato.
Flavor: medium intensity green fruitiness, balanced bitterness and spiciness, finishing with almond and chestnut notes.
Pairing: grilled vegetables, crudités, seafood, soups, white meats, goat cheese.
Serving temperature: best at room temperature 18–20 °C, also suitable for light cooking.
