Description
Site : very close to the village of Chablis, on the south west side. It is one of the seven Premier Crus due to its excellent exposure and kimmeridge soil concentration, giving it the easily recognizable character of Chablis.
History & tradition : in the sixties, when the Chablis vineyards were all but abandoned, Robert Drouhin recognized the potential of this region which had been ravaged by the phylloxera disease a century before. He was one of the first Burgundy propriétaires who set about revitalizing the area.
Tasting
Appearance: pale yellow robe, bright and luminous, with subtle golden or greenish reflections.
Nose: elegant and refined — citrus notes (lemon, lime, zest), delicate white flowers, sometimes yellow apple or fresh almond. The typical Chablis minerality (flint, chalk, sea breeze) becomes more expressive after aeration.
Palate: crisp and fresh attack, followed by a silky, rounded texture. Well-balanced with lively acidity, mineral tension, elegant fruit (citrus, white fruits) and a clean, saline, slightly stony finish of good length.
Food Pairing: perfect with grilled or sauced fish, seafood, shellfish, as well as white meats, creamy dishes, fresh vegetables or young cheeses.
Serving Temperature: 10–12 °C to enhance freshness, liveliness and mineral expression.
