Description
This is a blend of different parcels of Premiers Crus from the Domaine Joseph Drouhin (Roncières, Mont de Milieu, Montée de Tonnerre, Moireins), located on either side of the river Serein. They are harvested and vinified separately, then blended together. The result is a harmonious wine to which each Premier Cru brings its own identity.
History & tradition: in the 1960s, at a time when the Chablis vineyards were being abandoned, Robert Drouhin believed in the potential of the soil that had been ravaged by phylloxera a century earlier. He was one of the first Burgundy winegrowers to make the most of it, producing wines that were typical of the terroir in which they were grown.
Tasting
Appearance: bright pale yellow, green highlights, beautiful brilliance.
Nose: clean and expressive, with yellow lemon, citrus zest, crisp apple/pear, a floral touch (hawthorn), and a mineral signature (flint, wet stone, oyster shell).
Palate: lively, precise attack. The wine shows a straight, finely chiselled texture, driven by zesty acidity and a chalky minerality. Long, saline finish with citrus notes and a subtle iodine touch.
Food pairings: ideal with a seafood platter or oysters, grilled white fish or white fish with beurre blanc, and even a light creamy chicken dish, thanks to its lemony freshness and saline finish.
Serving temperature: between 10 and 12°C; 10°C recommended as an aperitif or with seafood, then 11–12°C with a richer dish.
