Description
Sake-making has been rooted in the Konishi family for several centuries. The name Shirayuki, which means ‘Snow White’, dates back to the 17th century. Legend has it that one of the first Konishi heirs, while working at his loom, saw Mount Fuji covered in snow, a vision that inspired the name of this sake. In 1963, after a series of major innovations in the manufacture and storage of sake, the family inaugurated the first year-round production plant.
Although sometimes referred to as ‘rice wine’, sake is closer to a beer, as it is produced by fermenting rice with brewing water, without undergoing vinification in the traditional sense.

To the eye: Shirayuki Akafuji has a clear, brilliant colour.
