Description
Founded in 1692, Domaine de l'Oratoire Saint-Martin is one of the benchmark estates of the Cairanne appellation in the Southern Rhône Valley. Farmed organically and biodynamically, the estate follows a low-intervention philosophy to express the purity of its limestone and clay terroirs. The Haut-Coustias wines come from the estate's highest hillside vineyards planted with very old vines and represent its flagship cuvées.
Haut-Coustias Rouge is the estate's flagship ageing wine. Produced from old-vine Grenache, Mourvèdre and Syrah, grown on the highest limestone slopes of Cairanne, it perfectly combines power, elegance and terroir expression. Hand harvested, fermented with indigenous yeasts and aged for an extended period in large oak foudres, it offers remarkable depth and complexity.
Tasting
Appearance: Deep purple-red colour with garnet reflections.
Nose: Intense aromas of blackberry, blackcurrant, black cherry, violet, black pepper, nutmeg, liquorice, Mediterranean herbs and subtle roasted notes.
Palate: Rich, concentrated and beautifully structured. Velvety tannins are supported by vibrant freshness and refined minerality. Dark fruit, spice and garrigue flavours lead to a long, complex and elegant finish.
Food Pairing: Perfect with roast lamb, dry-aged beef, game, Provençal beef stew, slow-cooked meats and mature cheeses.
